Homemade Potato Bacon Pizza Recipe

I don’t know if you noticed, but it was national pizza day this week! Though quite frankly, it’s national pizza day every day in our minds!
I seriously don’t know if there’s a single more frequently eaten food than pizza here. Whether it’s take out, homemade, or frozen, we almost always choose pizza over other foods.
And when we do homemade pizza, one pizza recipe reigns supreme. This homemade potato bacon pizza! If we’re going through the effort of doing homemade, it’s gotta be worth it right?! And this homemade potato bacon pizza totally is.

I first discovered potato bacon pizza in college. We had a little pizza place in the center of town, that had soooo many unique pizza types! One of those pizzas was potato bacon pizza, and I have never tasted something so good.
Every time we went there I would get the potato bacon pizza, and I have been in love ever since! When my husband and I moved in together, we knew we had to try to re-create it.

So this is our take on that potato bacon pizza! I think we came pretty close, and every time we make homemade pizza, I just have to make this one.
I’m not going to lie, it does take a little bit of prep work, but it’s worth it! I mean, it has potatoes, bacon, and cheese- how could it not be?!
This homemade potato bacon pizza is made using a pre-made, but uncooked dough…you can use your favorite one! Then it has a thin layer of sour cream, some garlic, a layer of potatoes and onions, the cheese, and bacon. YUM

I usually make my husband stretch out the pizza dough, because that’s my least favorite job haha! This time I did it myself and left it too thick, as you can probably see. I would stretch it out thinner next time, but it’s still so good!
What you need to make this homemade potato bacon pizza recipe:
Equipment:
- oven or pizza oven
- baking sheet, pizza stone, or pizza pan
- cutting board and knife
- microwavable bowl
Ingredients:
- your favorite pizza dough
- sour cream
- minced garlic
- potatoes
- onion
- salt and pepper
- shredded cheddar cheese
- cooked bacon
- scallions
- jalapeno (optional)

Homemade Potato Bacon Pizza
Ingredients
- your favorite pizza dough we use the premade unbaked dough from our local grocery store
- ⅔ cup sour cream
- 2 cloves garlic minced
- 2 medium potatoes sliced thinly (about ⅛ inch thick)
- ½ of an onion thinly sliced
- salt and pepper
- 1 ½ cup shredded cheddar cheese
- 5 slices of cooked bacon roughly chopped
- ½ of a jalapeno optional, thinly sliced
- 2-3 scallions thinly sliced
Instructions
- Let the dough come to room temperature so it is easier to spread. Prepare the ingredients. When the potatoes are sliced, place them in a microwaveable bowl, cover with water, and microwave for 5 minutes. Drain- but be careful, it will be hot!! Preheat the oven to 400 degrees fahrenheit*. Grease or oil your preferred pizza pan- we used a regular baking sheet, but you can also use a specific pizza pan or stone if you have one.
- Once all the ingredients are prepared, it’s time to assemble! Spread or roll out the dough to fit your pan. Place the dough into the pan, and form it to fit.
- Spread a thin layer of sour cream on the dough. For our size pizza (baking sheet), it took about ⅔ of a cup of sour cream. Sprinkle the minced garlic over the sour cream. Place the sliced potatoes in an even layer on top of the garlic and sour cream. If you have extra slices, you can either double up some or save them for another recipe.
- Place the sliced onion evenly over the potatoes, and top with salt and pepper to taste. Sprinkle the shredded cheddar cheese evenly over the top. Sprinkle the chopped bacon over the cheddar, and toss the jalapeno on there too if you are using it.
- Reserve the sliced scallions for after the pizza has baked.
- Bake for about 20-30 minutes** depending on your dough and how thick it is. You want the cheese melted, the potatoes soft, and the crust to be golden brown and cooked through in the middle.
- When it's done, sprinkle with the sliced scallions and let the pizza rest for a few minutes. Cut and serve!

It’s so good! It’s different than other pizzas but I have been in love ever since I tried it!
OK…I’ve never heard of potato-bacon pizza. Bacon on pizza, of course. But this makes perfect sense. I mean…loaded baked potato soup? Or baked potato with bacon and cheese and all those yummy things. Why not on pizza? Looks really yummy!
I had not heard or thought of it either until I had it in college. It was my immediate favorite! I love loaded baked potato anything, so this pizza is top of my list!
