Easy and Delicious Artichoke Spinach Pasta

An easy but decadent artichoke spinach pasta dish, that’s perfect for dinner or parties! With chopped artichoke hearts and a creamy spinach dip-like sauce, this dish is artichoke spinach dip in a pasta dinner form!

I don’t know what it is, but I always start to crave pasta dishes when spring arrives! I’ve been eating pasta like crazy these last few weeks, and one day decided I wanted to use up some odds and ends in a new pasta dish. And so, this artichoke spinach pasta was born!

I absolutely LOVE artichoke and spinach dip, so the idea of it in pasta form, another love, was too much to resist! I had to try it. And then eat it for 8 meals in a row!

This artichoke spinach pasta dish is actually a riff on the viral baked feta pasta from TikTok.

Do you guys do TikTok? I resisted for so long, but eventually gave in and made an account of my own. I mostly watch the videos of food, because, duh I’m me and I love food!

Anyways, this viral baked feta pasta, I think originated on TikTok in the U.S from this video, the creator of which has a popular blog where she posted the original recipe. This baked feta pasta has absolutely blown up and gone viral everywhere, and of course I’ve seen it many times.

So, I happened to be watching one of these baked feta pasta videos when I realized I could probably make a version of it with those odds and ends I wanted to use up!

I had half a block of cream cheese, half a box of elbow pasta, and a jar of artichoke hearts that I had been holding on to forever. I decided to grab a few extra ingredients, and experiment, and -voila- artichoke spinach pasta!

This recipe is a perfect dinner for when you want a pasta that’s a little more decadent but not hard to make. It uses simple ingredients, and would be great for a party too. It’s best served when it’s made, but you can definitely save it and have leftovers too!

Artichoke spinach pasta makes quite a lot- 4 large servings or 6 smaller servings (think side dish size). You can use your favorite elbow pasta. I used whole wheat elbows, but you can use regular if you want or even gluten free. Just be sure to cook whichever pasta you use according to the box directions!

What you need to make this artichoke spinach pasta:

Equipment:

  • a 9×13 ish baking dish (I used this one)
  • cutting board and knife
  • pot for cooking pasta
  • measuring spoon and cup
  • mixing spoon

Ingredients:

  • 12 oz. jar of artichoke hearts ( I like the grilled ones packed in water but you can use your favorite brand. With marinated ones, just make sure you adjust for salt to taste).
  • minced garlic
  • olive oil
  • salt
  • cream cheese (reduced fat is fine if you want to use that)
  • elbow pasta (regular, whole wheat, or gluten-free is fine)
  • frozen chopped spinach
  • grated parmesan cheese
  • sour cream (light or reduced fat is fine too)

Artichoke Spinach Pasta

Artichoke spinach pasta is like the dip and pasta combined! A decadent dish that is easy to make and perfect for dinner or parties.

Ingredients
  

  • 1 12 oz jar of artichoke hearts, drained and roughly chopped
  • 2 cloves of garlic, minced
  • ¼ cup of olive oil, divided
  • Salt to taste
  • 4 oz cream cheese reduced fat is fine
  • 8 oz of uncooked elbow pasta regular, whole wheat, or gluten free can be used
  • 10 oz frozen spinach, defrosted and extra water squeezed out
  • ½ cup grated parmesan cheese
  • ½ cup sour cream reduced fat is fine

Instructions
 

  • Preheat the oven to 400 degrees fahrenheit. Place the artichokes into a 9×13 baking dish. Add the garlic, and toss both together with 3 tbsp of the olive oil. Sprinkle with a bit of salt and make sure everything is well coated with the oil.
  • Make a little clear area in the center of the artichokes, and place the cream cheese there. Drizzle the cream cheese with the remaining 1 tbsp of olive oil. Place the dish into the oven and bake for 15 minutes.
  • Meanwhile, cook the elbow pasta according to the directions on the box.
  • After the artichokes and cream cheese have been baking for 15 minutes, remove the dish from the oven. Add the spinach on top of the artichokes, and then sprinkle with the parmesan cheese. Don’t stir yet, and place the dish back in the oven to bake for about 10 minutes.
  • After 10 minutes, remove the dish from the oven. Add the sour cream to the dish, and mix everything together. Add the cooked pasta to the dish, and mix it into the spinach and artichoke mixture until it’s well combined. Add more salt if needed, otherwise serve warm and enjoy!

  1. I have all the ingredients and I will make it this week- sounds heavenly! I want to learn more about the mystery/foodie book club- can I get the books as books or are they only for kindles?

    1. Excellent! The books for the cozy mystery cooking club can usually be found on the Kindle, in the libraries, or bought as books- so you have a choice! I have seen the current book available in all the formats. And all you have to do is grab a copy of the book for yourself, and then head on over to the Facebook group and join in the fun!
