This easy red velvet oatmeal is perfect for one, and baked in the oven! Like a dense cake, this individual baked oatmeal has a delicious red velvet flavor and cream cheese topping.

Once February comes around, I am all about everything red velvet! It’s one of my favorite flavors, especially with cream cheese.

I like to try to sneak it into as many foods as possible, and this year I tried out an awesome baked oatmeal version!

I’ve been making a version of this baked oatmeal for one for many years now, and I love switching up the flavors.

Recently, I’ve been seeing people on Tik Tok making individual baked oatmeal by blending up the ingredients together, instead of leaving the oats whole. I knew I had to try this!

It’s my new favorite way to make baked oatmeal. This red velvet oatmeal is like a dense cake texture- so good!

And of course, some mini chocolate chips and cream cheese topping was called for, you know? This baked oatmeal for one is perfect for your February breakfasts!

Baked Red Velvet Oatmeal for One

What Ingredients Do You Need?

For this red velvet oatmeal, you will need the following ingredients:

  • ½ cup old fashioned oats
  • 1 tbsp flour (all purpose, or white whole wheat)
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
  • Pinch of salt
  • ⅓ cup, plus 1 tbsp milk (regular, almond, or other non-dairy works fine)
  • 1 ½ tbsp maple syrup
  • ½ tsp vanilla extract
  • A few drops of red food coloring
  • 1 ounce cream cheese, softened
  • ½ tsp maple syrup
  • 1-2 tsp mini chocolate chips

Pretty straightforward, I think you’ll agree. You can use all purpose, whole wheat, or white whole wheat flour. I did not try any gluten-free flours, but I am sure you could use those as well.

Milk can be any kind of milk you prefer, and the cream cheese as well!

What Equipment Do You Need for Red Velvet Oatmeal?

Not much needed here! For the blender, I use my individual sized blender, but use whatever you have. You could also probably make this in a small food processor.

My ramekin was about an 8 ounce ramekin, so anything close to that size is great.

This red velvet oatmeal for one is easy to put together and can be made the morning you plan to eat it, or you can make it ahead of time and just heat it up when ready.

I loved this oatmeal so much (I made it like 20 times in a row!), and I hope you’ll love it too!

Easy Baked Red Velvet Oatmeal for One

Baked red velvet oatmeal, perfect for one! Like a dense cake, with delicious red velvet flavor, mini chocolate chips, and cream cheese topping.

Ingredients
  

  • ½ cup old fashioned oats
  • 1 tbsp flour all purpose, or white whole wheat
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
  • Pinch of salt
  • cup plus 1 tbsp milk (regular, almond, or other non-dairy works fine)
  • 1 ½ tbsp maple syrup
  • ½ tsp vanilla extract
  • A few drops of red food coloring
For Topping:
  • 1 ounce cream cheese softened
  • ½ tsp maple syrup
  • 1-2 tsp mini chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees fahrenheit.
  • Add oats, flour, cocoa, baking powder, and salt to a blender. Add the milk, 1 ½ tbsp of maple syrup, the vanilla extract, and red food coloring to the blender. Blend it all up, for about 35-45 seconds until the oats are all blended and everything is incorporated together.
  • Pour the mixture into a lightly greased individual ramekin.
  • Mix your cream cheese with the ½ tsp of maple syrup. Place this mixture on top, in the center, of your oat mixture in the ramekin.
  • Sprinkle the oat mixture with 1-2 tsp mini chocolate chips. Bake at 350 degrees fahrenheit for 20 minutes. Let cool for a minute or two, and enjoy!
